Chicken Thai Basil


One of our favorite recipes from The Bamboo Oriental Menu – ‘Chicken Thai Basil’ is easy to make and a guaranteed favorite for any dinner menu. This recipe is also featured in our ‘Zen Garden Cookbook’ and we had a lot of fun styling this dish. Using unusual crockery will add that extra element of sophistication to your cooking. Try this recipe for your next dinner party or simply make it for the family.

Chicken Thai Basil Recipe
Serves 4

200g chicken breast – diced into cubes
20g button mushrooms – sliced
2 garlic cloves – peeled and crushed
6 whole basil leaves
1 long red chilli – deseeded and finely sliced
1 handful of beansprouts
2 spring onions – finely sliced
1 tablespoon red curry paste
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
2 table spoons vegetable oil
½ teaspoon sugar
¼ teaspoon chilli flakes
10g corn flour
½ teaspoon black pepper
Salt to taste


  1. Marinate the chicken cubes with the salt, pepper, red curry paste, sugar, light soy sauce, dark soy sauce, chili flakes and corn flour
  2. Allow the marinade to sit for 10 minutes
  3. Heat a wok over a medium heat for 1-2 minutes or until completely hot and almost smoking
  4. Add in the vegetable oil, garlic, mushrooms and marinated chicken
  5. Once the chicken is cooked through, add the beansprouts, basil leaves, fresh chili and spring onions
  6. Serve immediately in a serving bowl

Bamboo tip: serve with a bowl of jasmine rice
